Everybody needs an easy, crowd-pleasing meal on hand for when hungry visitors stop by. This soup costs little, takes only a few minutes to make, and is a favorite among even non-tomato soup eaters because it tastes just like pizza. And these ingredients are easily kept on hand at all times.
Ingredients
- 1 Tbs. butter
- 1 Tbs. flour
- 1 Cup shredded cheese
- 2 Cups milk
- 4 Cans tomato soup
- 1 Can flavored diced tomatoes
- 2 Tbs. garlic powder
- 1 Tbs. oregano
- 1 Tbs. basil
- Salt, pepper, and sugar to taste
Directions
Melt butter over medium heat and stir in flour. Add cheese and coat with butter mixture. Heat slowly and add milk to keep the sauce from bubbling. Stir in the soup one can at a time, keeping the temperature from dropping too far. Add diced tomatoes and their juice. Stir in the spices and add water for desired thickness. Add salt and pepper to taste, and perhaps a little sugar to counter the acidity of the tomatoes. Heat until hot and serve.
The beauty of this recipe is that you can make it with things you have on hand. If you have spaghetti sauce or tomato juice, add those in, too. Any variety of cheeses will work, from mozzarella and parmesan to cheddar or American. Add more spices than you might normally think is wise, as it creates the flavor of pizza. You can also serve the soup with crackers, crusty bread, or even croutons and shredded cheese.
